Gluten Free Brazilian Cheese Bread

Ingredients

  • 1 cup chickpea flour aka garbanzo bean flour (4 oz)
  • 1/2 cup gluten free flour (2.5 oz)
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 cup shredded cheese (2 oz)
  • 1 cup milk (8 fl oz)
  • 1/3 cup olive oil (3 fl oz)
  • 1 egg

Instructions

  • Preheat the oven to 375℉ and lightly spray a mini muffin tin with Baker's Joy.
  • Sift flours, baking powder, and salt into a medium bowl.  Whisk in shredded cheese to fully combine.
  • In a separate bowl or mixing glass, whisk together the milk, oil, and egg.
  • Make a well in the dry ingredients and pour in the milk mixture.  Whisk until smooth and combined.
  • Use a tablespoon to fill a mini muffin tin.  Each well should be less than 3/4 full. Bake for 12- 15 minutes or until light golden brown.  Cool on a wire rack.
