Red Velvet Pancakes

Ingredients

  • 2 cups all- purpose flour
  • 2 tsps baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2- 3 Tbsps sugar
  • 2 Tbsps cocoa powder sifted
  • 2 eggs
  • 1 1/2 cups buttermilk
  • 1/2 cup sour cream
  • 15- 20 drops red food gel or 2 tsps regular red food coloring
  • 1 Tbsp vanilla

Instructions

  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, sugar, and cocoa powder.  Set aside.
  • In a separate bowl, whisk together the eggs, buttermilk, sour cream, food gel, and vanilla until well combined.  
  • Add the wet ingredients to the dry ingredients and gently whisk until just combined.  Some small lumps are fine.
  • Pour 1/4 cupfuls of batter into a greased pan over medium- low heat.  Cook for 2- 3 minutes per side.
  • To make heart shaped pancakes: spray a metal heart shaped cookie cutter with cooking spray and place it in the preheated pan.  Fill with a 1/4 cup of batter, using a spatula to push batter into all corners.  After 2- 3 minutes, use a pair of tongs to gently lift the cookie cutter up and away.  Gently flip pancake and cook the other side.

Notes

  • The batter will look more pink than red.  Gel food color intensifies over time and the pancakes will be red when they are done.  Feel free to adjust the color as you wish though.
