In a medium bowl, add the water, honey, oil, yeast, and about half of the flour. Stir until the mixture looks like lumpy clay.
Add the remaining flour and the salt. Use a wooden spoon to bring the dough together. When the dough ball sticks to itself and comes away from the sides of the bowl, you are ready to knead.
Turn the pizza dough out onto a lightly floured cutting board or silicone baking mat. Knead the dough for 5 minutes. Only add enough flour to prevent sticking.
Place the dough in a clean bowl and cover with plastic wrap. Let the dough rise at room temperature for 90 minutes.
Punch the dough down to expel extra gas. Divide the dough in two equal portions. Save one portion by spraying a ziploc bag with nonstick spray, add the dough and remove the air. Store sealed in the freezer for 3 months. Thaw before using.
Roll the other portion into a 10 inch circle. Transfer the dough to a well oiled cast iron skillet. If any air gets trapped under the dough, lift one edge and press the air out. Build up the edges of the dough to create the crust. Cover with cling wrap and place on the stove while the oven preheats to 500°F. Let the dough rise for 30 minutes.
Brush the pizza dough lightly with olive oil. Add the sauce, cheese, and toppings. Bake for 10- 15 minutes, or until the crust is golden brown and the cheese is melted.
Let the pizza cool in the pan for 10 minutes before carefully transferring to a cutting board. Cool for an additional 5- 10 minutes before slicing.
