Cast Iron Skillet Pizza Pie is an Easy Dinner

It’s time for a simple, easy dinner recipe that you’re going to love.  Cast Iron Skillet Pizza Pie! Well, my son loved calling it Yellow Pepper Pizza Pie.  Call it what you will, this homemade pizza is delicious and perfect for a lazy weekend dinner.

Story Time

 

My son loves to razz me with false statements designed to make me groan.  This just makes him giggle like a maniac and gets Daddy involved.  One of his favorite lines is “Green peppers taste the same as other peppers.”  They don’t. FYI.

Somehow this turned into a discussion about the best way to eat green peppers.  Naturally, that was pizza. This then led to my son wanting a Green Pepper Pizza Pie.  Not a regular pizza. A pizza pie.  Well, the grocery store had better looking yellow peppers, so that’s where we ended up.

Maybe you could bake this in an actual pie pan, but I decided to make this in my trusty cast iron skillet.  That bad boy is also perfect for making Irish Soda Bread.  The cast iron conducts heat really well, helping your pizza bake up beautifully!

I used my homemade pizza dough because it is crazy easy to make and I just love going the “from scratch” route.  Seriously, this stuff just takes a few minutes to pull together, then you just let it rise. Easy peasy. Or you could use store bought dough, but you can control the ingredients of homemade pizza dough, which I prefer.

How to Make Cast Iron Pizza

 

Once your pizza dough is done rising, roll it to a 10 inch circle.  Gently place the dough into a well greased cast iron skillet. Make sure you don’t have a lot of air trapped under the dough.  If you do, simply lift a bit of the dough and press the air out.

Cover the dough filled skillet with cling wrap and place the pan on top of the stove while you preheat the oven to 500℉.  Let it warm up there for 30 minutes. The high heat will give the pizza a delicious crust.  

 

 

Toppings Galore

 

After this second rise, it’s time to add the good stuff to your cast iron skillet pizza.  The measurements for pizza sauce and cheese are purely up to you. If you only like a thin layer of sauce, do that!  Want your cheese to be an inch thick? Pile it on!

But let me make a note of something.  The yellow peppers made the pizza pretty watery.  I’m not sure if it was the moisture from the veggies, or if they just weighed the cheese down and let the sauce escape.  Either way, dry off the moist ingredients and try to use small toppings.

Let’s Bake!

 

Just as the toppings are a personal decision, the bake time has some wiggle room.  You’re probably going to need at 12 minutes to properly melt the cheese and bake the crust. Beyond that, it’s kinda up to you.

After 10 minutes, I suggest watching the “Cast Iron Skillet Pizza Pie TV”.  AKA, sit in front of your oven and watch your pizza until it’s ready. You might want a dark crust or bubbly cheese.  But maybe you want it only just baked.  That’s what makes this recipe so great!

 

 

Be Patient

 

After it’s done baking, let the pizza cool in the cast iron skillet for 10 minutes before gently transferring it onto a cutting board.  Then, I suggest letting it cool for an additional 5- 10 minutes. If you try to cut the pizza too early, sauce and cheese will go everywhere.

We cut our cast iron skillet pizza into 8 little slices, but you can slice it up any way you like.  And if you were wondering, of course Ben did not end up eating it. Although he said it smelled like Pizza Hut, it did not taste like Pizza Hut, so he had mini corn dogs instead.  Kids.

Ingredients

  • 1 cup hot water 100℉- 110℉
  • 1 Tbsp honey
  • ½ Tbsp olive oil plus extra for brushing
  • 1 pkg instant yeast
  • 2 cups all- purpose flour plus extra for kneading
  • ½ cup whole wheat flour
  • ½ tsp salt
  • ½ cup pizza sauce
  • 1 ½ cups shredded cheese
  • Toppings of choice

Instructions

  • In a medium bowl, add the water, honey, oil, yeast, and about half of the flour. Stir until the mixture looks like lumpy clay.
  • Add the remaining flour and the salt. Use a wooden spoon to bring the dough together. When the dough ball sticks to itself and comes away from the sides of the bowl, you are ready to knead.
  • Turn the pizza dough out onto a lightly floured cutting board or silicone baking mat. Knead the dough for 5 minutes. Only add enough flour to prevent sticking.
  • Place the dough in a clean bowl and cover with plastic wrap. Let the dough rise at room temperature for 90 minutes.
  • Punch the dough down to expel extra gas. Divide the dough in two equal portions. Save one portion by spraying a ziploc bag with nonstick spray, add the dough and remove the air. Store sealed in the freezer for 3 months. Thaw before using.
  • Roll the other portion into a 10 inch circle. Transfer the dough to a well oiled cast iron skillet. If any air gets trapped under the dough, lift one edge and press the air out. Build up the edges of the dough to create the crust. Cover with cling wrap and place on the stove while the oven preheats to 500°F. Let the dough rise for 30 minutes.
  • Brush the pizza dough lightly with olive oil. Add the sauce, cheese, and toppings. Bake for 10- 15 minutes, or until the crust is golden brown and the cheese is melted.
  • Let the pizza cool in the pan for 10 minutes before carefully transferring to a cutting board. Cool for an additional 5- 10 minutes before slicing.
