Green Velvet Waffles For St. Patrick’s Day

Adding a splash of color to your breakfast is an easy way to make the day feel more festive.  But why just add food coloring to a plain waffle when you can make Green Velvet Waffles?! These thick, fluffy waffles are lightly sweetened and have a subtle chocolate flavor.  The vibrant green color makes these the perfect morning meal for St. Patrick’s Day.

Story Time

 

By now, y’all know how I love to make breakfast a fun time on holidays and special occasions.  In the past, I haven’t done much for St. Patrick’s Day besides add a little green color to pancake mix.  This year, I was inspired to dust off my waffle maker and make something a little bit extra. I took my Red Velvet Pancakes recipe, made a few tweaks, and created these tasty Green Velvet Waffles!

Ben was so excited to try the green waffles (favorite color!!!).  So naturally, he decided he didn’t like them because they were brown on top.  Sigh. Toddlers, am I right?  But these waffles are actually pretty darn tasty.  If you’ve tried the Pumpkin Pie Pancakes or the Red Velvet Pancakes, you’re pretty much guaranteed to be a  fan of these Green Velvet Waffles.

I’ve been making these Red Velvet Pancakes for my son for years and they’ve always been a hit.  My only “complaint” (if you can call it that) is that the measurements are weird. If you have my Ingredient Glossary, the conversion chart on the last page really helps with this!  Either way, I knew I wanted to make the Green Velvet Waffles a bit more measurement friendly.

To prevent the waffles from burning or overcooking, I cut the sugar down to just 3 tablespoons.  You can even cut it down to just 1 tablespoon if you plan on topping the Green Velvet Waffles with something sweet.  Since waffles don’t need to be nearly as puffy as pancakes, I also reduced the amount of baking powder.

Let’s Talk Waffle Makers

 

I received my waffle maker about two years ago as a Christmas gift, but for various reasons, I haven’t had too many chances to use it.  If you don’t already have one, I highly recommend buying one! They are great for turning leftover cake batter into quick, tasty treats and you can even make savory waffles.  Seriously. This thing rocks.

Now, I haven’t tried any other waffle makers besides this one by Black+Decker, so my expertise on different models is limited.  This one is a nice price point and I love how you can easily break the waffles into four sections. I have also never had a problem with waffles sticking to the machine, so that’s pretty great too.

My only beef is that it doesn’t do a great job of alerting you when the waffle is ready.  You have to keep your eye on it and wait for the green light to turn on. That’s kind of a bummer when you’re trying to multitask in the kitchen, but I found a solution to this.  The waffles cook for about 3 minutes, so I just set a little timer for 2- 3 minutes. I can run about the kitchen and clean up without having to stare creepily at the waffle maker.

 

Green Food Color

 

Okay, so I used this Kelly Green food gel by Wilton, but you could absolutely use regular old liquid food color for this.  The color won’t be as vibrant, but that’s totally fine! You can also change the amount of food color for a slightly different shade.  If you’re going for more of a mint green, I’d suggest using an ⅛ teaspoon of the food gel.

You should also note that food gel can be a bit messy, so be careful on this part!  I highly recommend checking or washing your hands once you put the gel away. When I made the Pink Champagne Cake, I had a tiny bit of pink gel on my hand and didn’t realize it.  I got it everywhere! And that’s another reason not to where your favorite clothes in the kitchen.  Pro tip right there.

 

 

 

Making the Waffles

 

Green Velvet Waffles are just as easy to make as any other waffle, so I won’t walk you through every little detail.  One thing though. For no specific reason, I add the wet ingredients to the dry when I make waffles and pancakes. Pretty standard.  But this time I noticed I was having some trouble getting the dry bits of flour on the bottom of the bowl to incorporate.

It’s important not to over-mix your batter to avoid tough, flat pancakes or waffles.  Next time, I think I’ll dry adding the dry to the wet. This will make the mixing a bit messier because the dry ingredients will try to fly all over.  However, I think this may make the final batter more homogeneous. I don’t know. Kitchen experiments are tasty though!

Final Waffle Thoughts

 

My waffle maker is pretty awesome, but it makes some big ole waffles!  Because of that, this recipe only made me 6 Green Velvet Waffles. That’s totally fine with me because I’m not feeding a lot of people.  If you need to make more than this, you should be able to easily double the recipe. When I made my Shrimp and Grits Waffles, I kept them warm in the oven as I baked the whole batch.

I know velvet + cream cheese is kinda a big deal, but I’m lazy.  Ya see, I don’t want to whip up a cream cheese glaze in the morning. Instead, I melt some white candy melts with a splash of cream until it’s smooth.  Then just drizzle it on for a quick and easy topping.  Of course, the standard butter and syrup combo works well too.

Ingredients

  • 2 cups all- purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 Tbsps cocoa powder
  • 2 eggs
  • 1 1/2 cups buttermilk
  • 3 Tbsps sugar
  • 1/4 tsp green food gel
  • 1 Tbsp vanilla

Instructions

  • In a large bowl, sift together the flour, baking powder, baking soda, salt, and cocoa.  Whisk to thoroughly combine.
  • In a separate bowl, whisk together the eggs, buttermilk, sugar, food gel, and vanilla.  Make sure the food coloring is evenly distributed.
  • Begin preheating the waffle maker and prep it according to the manufacturer.  Add the wet ingredients to the dry and whisk until just combined.  The batter will be a little lumpy.
  • Cook the batter in the waffle maker according to the manufacturer.  My machine takes 3/4 cup of batter per waffle.  Top with melted white chocolate, syrup, or powdered sugar!
