Breakfast is the BEST type of food, hands down, this is fact.  If you let me, I will eat breakfast for every meal of the day. This is also why I love brunch, because brunch is basically breakfast + cute cocktails.  I’ve gone through my recipes and my fun Pinterest feed to find some amazing recipes for this Breakfast Roundup. Check them out and tell me which one you’re going to make first!

Mini Blueberry Muffins by Bakes and Blunders

I made these miniature muffins for a brunch I hosted back in November and they were a hit!  Blueberry muffins are a personal favorite of mine, but I still wanted to try something new with this recipe.  The secret to these is using two types of blueberries. Say what?! Yep, I used dried blueberries and frozen wild blueberries.  The dried blueberries plump up when you bake the muffins and add nice flavor and texture. Regular blueberries can be a bit large for a mini muffin, so I used the frozen wild berries because they are smaller and created a more even distribution.

Growing up, my favorite donut was the Boston cream pie donut from a local bakery.  Pretty sure I still haven’t had an actual Boston cream pie, but I will forever be hooked on the flavors of silky chocolate and vanilla custard.  Sooooo, when I was perusing Pinterest for exciting breakfast recipes, this one had to be included in my breakfast roundup. The recipe uses cake mix in the pancakes to get that special flavor, kind of like these funfetti birthday cake pancakes.  It kinda seems like a dessert as much as a breakfast dish, but that’s fine by me!

Who doesn’t want to eat cookies for breakfast?  I haven’t made this specific recipe yet, but it sounds filling and so satisfying to eat.  The base of the cookie is quick oats, so you could even just tell yourself that you’re eating baked oatmeal if calling it a cookie is going to throw you off.  You can customize the cookie with whatever flavors sound best to you. Or, if you’re like me, just use up whatever leftover dried fruits, nuts, and other mix-ins you have floating around.  This is one of those raid-the-pantry, everything-but-the-kitchen-sink recipes.

Before I even finished finding the rest of the recipes in this breakfast roundup, I knew that I was going to include these Cranberry Ginger Bran Muffins.  Personally, I think the flavor combination is absolutely unique and I’ve never seen this combo before. When I was writing the post for this recipe, I discovered how much I love ginger.  The crystallized ginger is definitely the star here and adds a sweet, spicy kick. Bran muffins are known for tasting like cardboard, but this recipe sticks out to me because it is moist, packed with flavor, and pleasantly filling.

 

French Toast with Red Wine Nectarines from Delish

 

This recipe is near and dear to my heart because it is the last new recipe I made before I found out I was pregnant.  My little brother came down (up?) to spend Christmas with me since I couldn’t be with family because I had to work. I wanted to make something exciting for Christmas breakfast and red wine nectarines sounded divine!  To be fair, mine were red wine peaches because it was December and I could only find frozen peaches. Either way, this recipe was a fun, tasty twist on a classic French toast. Fast forward a week or two and I found out Ben was on the way.  That was the last time I had wine for over two years!

Pretty sure this is the first puffed pancake recipe I ever made.  It’s crazy easy to make and quicker than regular pancakes. My favorite part is the lemon zest and fresh berries because it just has a sharp, bright flavor that tastes like Spring and happiness.  I’m serious, which is why I had to include this in my breakfast roundup. Quickly whip up the batter, pour it into your cast iron skillet, top with berries and bake until puffy and golden. It’s a beautiful dish that will make you feel like you’ve got your life together.

Okay, kinda the same thing as the Double Berry Puff Pancake right up there, but it’s not.  While these mini puffed pancakes aren’t the same kind of cute, they are adorable and super tasty.  The pancake batter is flavored with a hefty bit of orange zest and I cannot even begin to tell you how amazing zest is.  It can totally change a dish. What I love about Mini Dutch Babies is being able to pick and choose your topping. I loved filling them with homemade cherry pie filling, frozen blueberries that I nuked in the microwave, and even plain maple syrup.  You can make a batch of these babies (heehee) and save them in the fridge. Just reheat however many you want and choose your fillings.

This is one of the most unique recipes I’ve seen in awhile, so I had to include this in my breakfast roundup.  Make a polenta porridge, more or less, and pour it into a pan lined with fresh cut strawberries. Once the polenta has set, you can cut them up and lightly fry both sides before topping with maple syrup, fresh fruit, whipped cream, and more.  I’ve been eyeing up this beautiful recipe for awhile now, so I’ll need to try it soon!
