Cinnamon Maple Rice Krispie Treats

Fall Vibes
We have turned the heat on y’all. It’s getting cold during the nights, and the mornings have a bit of a nip, even though we’re roasting by the end of the day. Ah yes, Fall in Texas! But at least fall flavors like maple and cinnamon are back on the menu.
I got some authentic Canadian maple syrup (that’s serious stuff guys) a bit ago and decided that now was the perfect time to whip that out. Pairing that with my cinnamon sweet bits and a hint of browned butter just makes these cinnamon maple rice krispie treats shine.
Cinnamon Maple Rice Krispie Treats
These no bake treats are super dupes simple to make. Start by browning the butter in a large pot. Since it is such a small amount, it’ll turn quick. The second you see a hint of amber, turn off the burner and/ or remove the pot so you can add the marshmallows.
Once the marshmallows are all melty, we add our flavorings. In this recipe, that’d be the maple syrup, vanilla, cinnamon, and a pinch of salt. After that’s combined, we fold in the puffed rice cereal and cinnamon sweet bits.
Press the mixture into a prepared pan and let them cool. It could take as little as 30 minutes, but I usually wait overnight. Then you can slice and dice your cinnamon maple rice krispie treats however you like! Personally, I trim the edges first so that every square is lookin’ sharp.
Choosing Ingredients
In less than 300 words, we have completely covered the ins and outs of this recipe. It really is that simple! But I have a few notes to add about how to choose your ingredients.
Marshmallows
Even though we’re melting them, size does matter here. Go for the biggest marshmallows you can find. For me, that’s just a standard one, but I suggest avoiding the minis. That’s simply because all marshmallows are coated with cornstarch to prevent sticking.
The smaller the marshmallow, the greater the surface area, and the greater the amount of cornstarch. This can interfere with the melting process and consistency. All that being said, if you can only find mini ones, your cinnamon maple rice krispie treats will still be fine!
Maple Syrup
I used pure maple syrup for this recipe simply because I had it on hand. If you do not have real maple syrup in your pantry, you absolutely do not need to buy some. It’s pricey!
Normally, I would just use maple flavored syrup. My go-to brand is Log Cabin, just in case you’re wondering how I like to dress up my pancakes! That stuff should work just fine for this recipe.

Cinnamon
I bought cinnamon sweet bits from King Arthur Baking a while ago and used them to make my sweet cinnamon chai biscotti. They add a little explosion of cinnamon goodness to your baked goods. But again, I don’t want you to run out and buy anything you don’t want to.
The added ground cinnamon adds plenty of flavor on its own. In fact, if you’re more into the maple part of these cinnamon maple rice krispie treats, I would scale the cinnamon back to ¼ teaspoon if you have those cinnamon sweet bits. It’s all about creating the flavor balance that you enjoy.

Cinnamon Maple Rice Krispie Treats
Ingredients
- 5 Tbsps unsalted butter
- 10 oz marshmallows
- 2 Tbsp maple syrup
- 1 tsp vanilla
- 1/2 tsp cinnamon
- Pinch of salt
- 6.5 oz puffed rice cereal
- 2 oz cinnamon sweet bits plus more for topping
Instructions
- Prepare a 9x13 dish by spraying with oil, then line it with parchment paper. Spray the paper lightly and set the pan aside for later.
- Place the butter in a large pot and melt over a medium- low heat. Once melted, bump the heat up to medium and cook, stirring regularly, until the butter begins to turn a light amber.
- Remove the pot from the heat and stir in the marshmallows. Once the marshmallows are starting to melt and incorporate into the butter, place the pot back on a low heat. Stir until the mixture is completely melted and combined.
- Remove from the heat and stir in the maple syrup, vanilla, cinnamon, and salt. Once well combined, scrape any excess mixture off of the spatula and spray the spatula with oil. Fold in the puffed rice cereal and cinnamon sweet bits until completely combined.
- Dump the mixture into the prepared pan and press gently into an even layer. Sprinkle with a few more cinnamon sweet bits and use a greased spatula to gently, but firmly, press it into the pan. I like to finish it off by greasing the bottom of a glass and gently pressing the surface to ensure it is well packed and even.
- Let the rice krispie treats cool and set up for at least 30 minutes, or overnight. Once firm, slice into squares.
- To store: layer the squares between parchment paper in an airtight container. Keep on the counter for up to a week.
Notes
- Depending on how big you cut the squares, you could easily get 12- 18 servings.
- This is very cinnamon forward. You could reduce it to 1/4 tsp of cinnamon if you prefer. However, if you can't get the cinnamon sweet bits, I suggest keeping the regular amount of cinnamon.
