Peach Mango Cobbler with Frozen Fruit

Cobblers are just tasty, simple desserts that are begging to be made every time the weather warms up. With this peach mango cobbler recipe, you don’t have to wait for the fruit to be in season, or waste time peeling and chopping it. Instead, use frozen fruit for a quick, easy dessert!

Happy Birthday

 

My husband just celebrated his birthday a few weeks ago. Every year, I want to make him some over the top, super extra cake, but my man just doesn’t like cake that much. I was kind enough to let him pick his own dessert, and he asked for peach cobbler.

Peach Mango Cobbler

I promised not to be too extra about it. In the end, I jazzed it up with a dash of spices and some mango. The mango made its way into the mix simply because I didn’t have enough peaches in the freezer. At the end of the day, the birthday guy was happy, and the peach mango cobbler was delicious!

 

 

Frozen Fruit… This Is The Way

 

It’s not quite juicy peach season yet, but also who wants to deal with chopping up that many peaches? No thank you. So I immediately knew I needed to find a recipe that used frozen fruit. I ended up checking out Nutmeg Nanny’s recipe

I trimmed the recipe down to fit into an 8×8 pan because we were heading out of town soon and didn’t have time to polish off a large cobbler. Then I tweaked the spice scene a bit. I’m obsessed with ginger and had to throw it in there. You don’t need to thaw the fruit, but if it’s sticking together in a big lump, microwave it just enough that you can stir the fruit easily.

Peach Mango Cobbler

 

This cobbler is so easy to make. Mix up the filling ingredients, pour in a pan, and drizzle with butter. Then use a food processor to mix up the topping, stir in some eggs, and dollop over the fruit. Bake until golden and bubbly!

Peach Mango Cobbler served with vanilla ice cream

Serve the peach mango cobbler while it is still warm with a scoop of vanilla ice cream. The fruit is hot and jammy, then the cool vanilla ice cream melts and becomes almost like a sauce. It’s beautiful. 

 




 

Cobbler vs Buckle vs Crisp

 

Each of these desserts involves gooey, jammy fruit with a unique topping. A cobbler has a denser, biscuit like topping. Buckles are topped with cake batter. A crisp looks like it’s got granola on top, but it’s more like an oat and streusel mixture.

Peach Mango Cobbler

A few years ago, I made a mixed berry buckle that was soooo good. In fact, my husband acted as a hand model for some of those pictures. That recipe uses fresh fruit and is perfect for summer parties, picnics, and BBQs.

Ingredients

Peach Mango Filling

  • 2 oz sugar
  • 1 oz all-purpose flour
  • 1/8 tsp cinnamon
  • 1/8 tsp ginger
  • Pinch of salt
  • 16 oz frozen peaches
  • 8 oz frozen mangoes
  • 2 Tbsps unsalted butter melted

Topping

  • 3.5 oz sugar
  • 2.5 oz flour
  • 3/4 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/4 tsp ginger
  • 1/4 tsp salt
  • 2 Tbsps unsalted butter cold and cubed
  • 1 egg beaten

Instructions

Peach Mango Filling

  • Preheat the oven to 350℉. Lightly coat an 8x8 inch pan with cooking spray and set aside.
  • In a small bowl, combine sugar, flour, cinnamon, ginger, and salt. Whisk to combine and set aside.
  • In a large bowl, add frozen peaches and mangoes. If they are frozen into a solid block, microwave just enough so that the fruit can be stirred. Add the dry ingredients to the fruit and toss to combine.
  • Add the fruit mixture to the prepared pan and spread into an even layer. Drizzle with the melted butter and set aside.

Topping

  • Place the sugar, flour, baking powder, cinnamon, ginger, and salt in a food processor. Pulse to combine.
  • Dot the cubed butter over the dry ingredients and pulse until the butter is in small pea sized bits.
  • Transfer to a small bowl and add the beaten egg. Gently stir and fold until you have a cohesive dough.
  • Drop spoonfuls of the dough evenly over the fruit in the baking pan. Try your best to slightly smooth the dough over the fruit.
  • Bake for 50- 55 minutes or until the cobbler is golden brown and bubbly. Cool slightly and serve with vanilla ice cream.
