I started Bakes & Blunders back in 2018 with the goal of sharing what I learned about baking with other enthusiastic home bakers. With all of these years of practice, I’ve learned a lot, so I’m putting everything I know about buttercream into one cohesive FREE course.

1. Introduction to Buttercream
Before you begin making your own buttercream from scratch, it’s important to understand the differences between the many buttercream varieties. In this post, you’ll learn all about the five types of buttercream that I use in my own recipes.
This unit also includes a step by step video that covers each buttercream variety and how to make them. The video is a bit longer than most of the others on the Bakes & Blunders YouTube channel, but it is packed with a ton of information.
2. 9 Ways to Flavor Buttercream
Part of the fun in baking is creating interesting and delicious flavors! Learning how to add flavors to your buttercream will get you started on your own recipe creation journey. Even if you don’t want to create your recipes, understanding your options will give you much more freedom in the kitchen.
This unit will give you many, many options for flavoring your frosting, but feel free to get creative and come up with even more ways to spice up your buttercream. And if you do come up with something fresh and new, please tell me about it!
3. Tips for Making Dark Buttercream
At this point, you are comfortable making buttercream and creating unique flavors to compliment your bakes. But now we need to learn how to create dark, vibrantly colored frosting. This unit will teach you three different methods for making dark buttercream.
Be sure to watch the video tutorial included in the unit so you can see how these three techniques develop the color. The recipe you’ll find at the bottom of this lesson includes specific measurements for making black, red, and navy buttercream, though you can use these methods to create any vibrant color.

4. Piping 101: How to Pipe Buttercream Like a Pro
While there may be times when a rustic buttercream finish is the best choice, learning how to use a piping bag with confidence has many applications in the world of baking. In this unit, you’ll learn how to prepare a piping bag, fill it with buttercream, and hold the bag without spillage.
This lesson also includes a video tutorial demonstrating each part of the process. Like many things in baking, there are multiple “right” ways of doing this. This lesson should be a starting point, but as you practice you may decide to tweak your technique so that it feels more comfortable and natural to you.
5. Piping Tips for Beginners
Preparing and holding a piping bag is just the start. Now you’re ready to learn how to use piping tips. This unit discusses different piping movements and will give you advice on how to learn more about your different piping tips.
The video tutorial in this lesson demonstrates how I use different styles of piping tips and includes examples from some of my bakes over the past few years. Be prepared for a lot of piping practice!
