Mint Chocolate Brownies for the Holidays
Mint Chocolate Brownies. I feel like that’s all I need to say to get your attention, but I can definitely go on about these beauties. Picture this: A fudgy chocolate brownie, with a creamy mint layer, topped with silky chocolate ganache. I mean, this brownie recipe is absolute heaven!

If you’ve read my About Me page (check it out!), you already know that part of the inspiration for Bakes & Blunders came from putting together a family cookbook. Now, that cookbook is still in production because my family LOVES food, so there’s a lot of recipes to go through. This recipe for Mint Chocolate Brownies comes from my Grandmom. She didn’t create the recipe, but she sent me a photocopy of the original source from who knows how many years ago.
These Mint Chocolate Brownies are actually featured on the Christmas Cookie List that includes these tasty Thumbprint Cookies. It’s a big list! I think these brownies are pretty amazing for any day of the year, but the green layer of mint cream makes this a perfect recipe for Christmas, St. Patrick’s Day, and even Easter.

I was super excited to make these because Ben was going to be my little assistant. It’s so cute when he helps out! Of course, by the time we were ready to bake, he was far too interested in his Legos to be bothered. Even melty chocolate and bright green food gel could not pull him away from his “Ben Special” (original Lego design). So, no cute baking pictures today, but I’ll see if I can’t get him in the kitchen another time!
Mint Chocolate Brownies
There are three elements to these Mint Chocolate Brownies: the brownie base, mint cream layer, and chocolate ganache topping. None of these elements are difficult to make, but they do take more effort than an easy box of brownie mix. In my opinion, they are worth it! Poor Josh would have just preferred plain old brownies, or ones with caramel and nuts. I might just have to make him some! But back to the Mint Chocolate Brownies…
Brownie Base
I feel like you could easily get away with just making these as plain ole brownies! Josh would certainly approve of this simplification. The bottom and edges were deliciously crispy, but the interior is beautifully chewy. All in all, the perfect brownie. There’s nothing tricky about them, but let me make sure we’re on the same page.
Melting the butter and unsweetened chocolate over a double boiler, or a bain-marie, provides gentle heat and will pretty much eliminate the risk of burning your chocolate. Burnt chocolate is disgusting. Don’t do it. Fill a pot with an inch or two of water and bring to a simmer. Place a heat proof bowl on top, making sure the water doesn’t touch the bottom. That would make the bowl too hot.
You can always heat the chocolate and butter in a microwave, but I would do it in 30 second bursts, stirring well after each hit. Towards the end, I would reduce the bursts to 10 seconds. Your chocolate can burn easily in the microwave, but it is a quick and easy option if you choose.
Mint Cream Cheese
This layer is gorgeously green, refreshingly minty, and a tasty contrast to the rich chocolate. When you mix this concoction up, it’s going to look super thin and runny. I absolutely thought this was going to run down the sides and be a bit thin. Don’t worry, it ends up being nearly as thick as the brownie! These Mint Chocolate Brownies are serious!
My brownies came out of the oven before I had finished making this element. It is totally fine to let the brownies chillax on top of the oven while you finish up. The brownie layer will be only slightly baked. It is super easy to just pour the green mint cream cheese goo evenly over top of the brownie. You shouldn’t have to spread it at all.

Silky Ganache
I’ve got ganache all over Bakes & Blunders! If you need a full tutorial, check out this ganache tutorial. This step is so super easy, don’t try to skip it! The silky chocolate ganache topping adds a deliciously smooth texture, but it also makes the Mint Chocolate Brownies look so pretty.
After they come out of the oven, they look tasty, but if I’m being honest, they don’t actually look too pretty. The top of the green mint layer has a dull look and is slightly golden brown in spots. Pouring silky smooth ganache over this covers up imperfections and creates a beautiful layering effect. Simply use an offset spatula to evenly cover the Mint Chocolate Brownies.
Now Chill Out & Watch
It’s super important that you give the Mint Chocolate Brownies plenty of time to chill in the fridge before you add the ganache. Then, let the ganache set up in the fridge before slicing. This will take about 15- 30 minutes. If you want to see those lovely layers once you cut the brownies up, make sure to wipe your knife down after each cut.

Mint Chocolate Brownies
Ingredients
Brownie
- 4 oz unsweetened baking chocolate chopped
- 1/2 cup unsalted butter 4 oz
- 2 cups sugar 14 oz
- 3 eggs
- 2 tsps vanilla
- 1 cup all- purpose flour 4.25 oz
Mint Cream
- 8 oz cream cheese softened
- 2 Tbsps unsalted butter softened
- 1 Tbsp cornstarch
- 1 can sweetened condensed milk 14 oz
- 1 egg
- 1 tsp peppermint extract
- green food gel
Chocolate Ganache
- 6 oz semi-sweet chocolate
- 1/2 cup whipping cream 4 fl oz
Instructions
- Preheat oven to 350℉. Grease a 9x13 baking pan and line with parchment paper for easy lifting, set aside.
- Melt chocolate and ½ cup of butter in a double boiler, stirring regularly until smooth. Remove from the heat and allow it to cool slightly.
- In a medium bowl, beat the sugar, 3 eggs, vanilla, and flour until just combined. Add the chocolate mixture and beat until combined.
- Spread the brownie batter in the prepared baking pan and bake for 15 minutes, or until set, but not cooked all the way through.
- In a stand mixer, beat cream cheese, 2 Tbsp butter, and cornstarch until fluffy. Gradually beat in sweetened condensed milk, then beat in remaining egg, peppermint extract and green food coloring.
- Pour over brownie layer. Bake for 30- 35 minutes or until set. Once baked, cool to room temperature before making the ganache.
- While you make the ganache, place the brownies in the fridge so that they will be slightly chilled. Heat the cream in the microwave until hot, in 20 second bursts. Pour over the chocolate and let sit for 5 minutes. Mix until smooth.
- Pour the ganache over the bars, allow it to cool, then chill in the fridge until set before cutting into bars and serving.
Notes
- It is easier to melt the chocolate and butter if the butter is room temperature and cut into chunks.
- If you pour the ganache on the brownies while they are still quite hot, the ganache could become too runny.
